In 2019, renowned chef Francis Paniego became the food advisor of Sport Hotel Hermitage & Spa, bringing with him a wealth of invaluable experience in the hospitality sector. His culinary vision and concept combines tradition and modernity, taking guests on a unique experience that blends food from the mountains and traditional Andorran home-cooking with typical dishes from La Rioja and ingredients of the utmost quality, with most produce being locally sourced.
Francis Paniego’s track record speaks for itself. Born in April 1968 in Ezcaray (La Rioja, Spain), he has been awarded two Michelin stars and three Repsol suns for his work in his family's restaurant, El Portal de Echaurren, in his home town. And that’s without mentioning the Michelin star he won in 2011 as head of the kitchen at Hotel del Marqués de Riscal in Elciego (Álava, Spain), where he had worked since 2006.
